OK, I can undestand why Blondie could "forsee" the possible need and unload Tuco's gun.  But I don't understand why Manco would "pinch" Mortimer's watch; how and why would he have the watch?

  Because it makes for a cool entrance with Manco holding the watch as the tune on the other watch dies down. 

  Seriously though, I agree with derringdo's post.  He probably just picked it up when he saw it lying on the ground.

I think Leone liked to have the "hero" have a trick or two up his sleeve for an advantage at the end: the chest shield in FOD, having the watch in FDM, unloading Tuco's gun and "not writing" a name on the rock in GBU.

I actually haven't watched For a Few Dollars More in a long time, so I don't remember how long Manco was with Indio's gang but maybe he saw Indio with the pocket watch when he was with the gang, saw the connection with Mortimer's watch and snatched Mortimer's watch so that, if Indio had something against him or knew him(thinking from Blondie's perspective) wouldn't try anything quick or hostile on him when he made his to Indio's gang? Not that it stopped them from beating them... ;)

Perhaps clint remenber the first discussion with lee van cleef, in the hotel, Mortimer had his watch on his hand ...and mortimer  remember the sad truth of his sister...

clint was thinking in the hotel that, this watch was mystery...(have ever been young? clint said to him) and mortimer took his watch.
