I know that they remix the sound for the DVD's in order to get a 5.1 soundtrack, but do they also have to re-dub every actor? I mean, does Robert de Nero, Clint Eastwood etc have to re-do their lines, which they did some 20 or 30 years ago?

The original print of Lawrence of Arabia had lost the sound, so when they did the restored director's cut they had Peter O'toole and others actors in the recording room to re-do their lines. They also had to do all the sound again.

Is this the case with the restored leone films out on SE DVDs?

no, they're just originally post-synchronized(dubbed) back when the movie was made... it's an italian thing
