I've only seen about a dozen, so i have a limited experience but I can't choose 3 between

street law(castellari)
the big racket(castellari)
violent city(sollima)
revolver(sollima)
the boss(di leo)

those are the big five for me... street law definitely being my favorite... can't beat that music.

Solima's Citta Violenta and Revolver are good. Bronson is more lively and human in Citta Violenta than his American action films. I love Morricone's music also.
