I'll start it off...

The Wild Bunch

Pike Bishop: If they move, kill 'em.

Pike Bishop: He gave his word.
Dutch Engstrom: He gave his word to a railroad.
Pike Bishop: It's his word.
Dutch Engstrom: That ain't what counts! It's who you give it to!

Sykes: Well, me and the boys got some work to do. You want to come with us? It ain't like it used to be; but it'll do.

Pike Bishop: We're not gonna get rid of anybody. We're gonna stick together, just like it used to be. When you side with a man, you stay with him. And if you can't do that, you're like some animal, you're finished. We're finished. All of us.

Pike Bishop: Let's go.
Lyle Gorch: Why not.

Pike Bishop: C'mon, you lazy bastard.
Dutch Engstrom: I'm comin', dammit.

Once Upon a Time in the West

Cheyenne: Yeah, go on. Play, Harmonica. Play, so you can't bullshit.

Harmonica: You brought two too many.

Frank: People scare better when they're dying.

Harmonica: You know, Wobbles... I'm kinda mad at you.

Cheyenne: [of Harmonica] He not only plays. He can shoot too.

Cheyenne: You know, Jill, you remind me of my mother. She was the biggest whore in Alameda and the finest woman that ever lived. Whoever my father was, for an hour or for a month - he must have been a happy man.

Frank: More dead men.
Harmonica: They were all alive until they met you, Frank.

Cheyenne: Did you make coffee?
Jill: This time I did.

Cheyenne: [to Jill] You know what? If I was you, I'd go down there and give those boys a drink. Can't imagine how happy it makes a man to see a woman like you. Just to look at her. And if one of them should pat your behind, just make believe it's nothing. They earned it.

Cheyenne: He's whittlin' on a piece of wood. I've got a feeling when he stops whittlin'... Somethin's gonna happen.

Harmonica: So, you found out you're not a businessman after all.
Frank: Just a man.
Harmonica: An ancient race. Other Mortons will be along, and they'll kill it off.
Frank: The future don't matter to us. Nothing matters now - not the land, not the money, not the woman. I came here to see you. 'Cause I know that now, you'll tell me what you're after.
Harmonica: ...Only at the point of dyin'.

Frank: Keep your lovin' brother happy.

Jill: I hope you'll come back someday.
Harmonica: (Turns, looks at Jill) Someday.

Unforgiven

Ned Logan: You were crazy, Will.
Will Munny: Yeah, no one liked me. Mountain boys all thought I was gonna shoot 'em out of pure meanness.

Will Munny: It's a hell of a thing, killing a man. Take away all he's got and all he's ever gonna have.
The Schofield Kid: Yeah, well, I guess he had it coming.
Will Munny: We all got it coming, kid.

Will Munny: You don't have to worry, Kid. I ain't gonna kill you. You're the only friend I got.

Will Munny: Who's the fellow owns this shithole?

Little Bill Daggett: Well, sir, you are a cowardly son of a bitch! You just shot an unarmed man!
Will Munny: Well, he should have armed himself if he's going to decorate his saloon with my friend.

Little Bill Daggett: You'd be William Munny out of Missouri. Killer of women and children.
Will Munny: That's right. I've killed women and children. I've killed just about everything that walks or crawled at one time or another. And I'm here to kill you, Little Bill, for what you did to Ned.

Little Bill Daggett: All right, gentlemen. He's got one barrel left. When he fires that, take out your pistols, and shoot him down like the mangy scoundrel he is!

Will Munny: You better bury Ned right! Better not go cuttin' up, nor otherwise harm no whores. Or I'll come back and kill every one of you sons-o-bitches.

High Plains Drifter

Stranger: Wonder what took her so long to get mad?
Mordecai: Because maybe you didn't go back for more...

Open Range

Charley Waite: Men are gonna get killed here today, Sue, and I'm gonna kill 'em.

Boss Spearman: We got a warrant sworn for attempted murder for them that tried to kill the boy who's laying over there at the Doc's, trying to stay alive. Swore out another one for them that murdered the big fella you had in your cell. Only ours ain't writ by no tin star, bought and paid for, Marshal. It's writ by us, and we aim to enforce it.

Boss Spearman: Man's got a right to protect his property and his life, and we ain't lettin' no rancher or his lawman take either.

Charley: You the one killed our friend?
Butler: That's right. I shot the boy, too. And I enjoyed it.
[Charley pulls out his gun and shoots Butler]

Boss Spearman: [cocks shotgun] One twitch, and you in hell.

The Great Silence

Sheriff Burnett: Set a wagon outside of town and put as much food on it as you can spare. If they eat, they'll behave. And you women, all of you, stay inside. Understand? Now let's get moving. C'mon.
Pollicut: Fill a wagon. So now, these bandits gotta be fought with bread and butter. When are we gonna see some law and common sense in this town?
Regina: When somebody hangs you.

Regina is such cool charakter.  Wink

Pauline: Once, my husband told me of this man. He avenges our wrongs. And the bounty killers sure do tremble when he appears. They call him "Silence." Because wherever he goes, the silence of death follows.

Django

Django-Can you Hear This!! (Its so funny)

The dubbing translations in Django are painfully awful sometimes.

a love scene from the italian version...

MARIA  For once, if only for a moment, you gave me the illusion that I had a man by my side.  To protect me.  To love me.

DJANGO Then we must make sure that the illusion is complete.  Brief, but complete.

(Proceeds to undress Maria)

and the same scene in the english version...

MARIA  For once you made me feel like a real woman, with a man by her side.

DJANGO -- I'M GLAD I COULD MAKE YOU FEEL LIKE A REAL WOMAN! NOW CAN WE GRACIOUSLY HUMP?

The Searchers

Ethan: Injun will chase a thing till he thinks he's chased it enough. Then he quits. Same way when he runs. Seems like he never learns there's such a thing as a critter that'll just keep comin' on. So we'll find 'em in the end, I promise you. We'll find 'em. Just as sure as the turnin' of the earth.

Reverend Clayton: I say we do it my way. That's an order!
Ethan: Yessir. But if you're wrong don't ever give me another.

Reverend Clayton: You wanna quit, Ethan?
Ethan: That'll be the day.

Martin: I hope you die!
Ethan: That'll be the day.

Ethan: Well, Reverend, that tears it! From now on, you stay out of this. All of ya. I don't want you with me. I don't need ya for what I got to do.

Ethan: What do you want me to do? Draw you a picture? Spell it out? Don't ever ask me! Long as you live, don't ever ask me more.

Ethan: There's no more time for praying! AMEN!

Ethan: Let's go home, Debbie.

That's also one of my faves from TGS, that reminded me how much I wanna see it again.
It's one of those classic quotes you never forget.
