In the first shoot out of the film, was that an arm Tuco jumps out of the window with?  If so,  I presume it's the arm of the Bounty Hunter that confronts Tuco in the tub scene. It looks like a large beef rib bone!

Yes, I think it must be a mutton leg, and a bottle of something, but its hard to tell. Tuco crashing through that window must have been nerve racking for everybody; only had one chance to get it right !

Actually, I read somewhere recently (maybe here, or in the Cinema Retro magazine?) that Eli said that scene was filmed three times.

It would appear that the French trailer was made out of a few alternative and deleted scenes, including part of the Socorro scene and the cannon blowing apart just before the Ecstasy of Gold scene.

Muy French is not the greatest, but I think in the first scene Tuco is describing Blondie as "He smokes cigars, he is tall, blond and  ?????". All other scenes (except for the cannon) are alternative scenes, but I believe the dialogues are the same as in the movie.
