According the IMDB, there is a scene during the final gunfight where you can see cars driving on a highway in the background. Has anyone else seen this?

I think you, or rather IMDB is referring to the final scene in GBU, with Tuco standing on the cross and almost getting hanged. During that scene, you could actually see (at least on VHS tapes)  a car passing by on a hill in the background, BUT:

1.  First of all, you could barely see it; I could only spot it after watching very carefully in slow motion and only after somebody on this forum pointed it out many years ago.
2. I have checked on a couple of DVDs of GBU I own and I couldn't see the car anymore. Guess it has been deleted during restoration or when they transferred the movie from VHS to DVD.

Somewhere on this forum there is a thread on this issue, but I'm too lazy to search...

That was a rhetorical response, like Harmonica's response in Once/West when Jill asks him if he'll be back some day, and Harmonica responds "some day".

Was that a subtle hint to GBU?

I doubt it, but it's a very emotional scene on a subtle, much deeper level, and a great achievement for the sole fact of not being gay (in such a machoistic picture).
