Wallach as Tuco
Eastwood as Will Munny
Redford as Waldo Pepper
McQueen as Henri Charrierre (Papillon)
Hackman as (any of his roles, he's so versitile, but French Connection and Unforgiven are the best I've seen)
O'Toole as Lawrence
Wayne as Ethan
Slim Pickens as Taggot
Gene Wilder as Mr. Bloom in Producers
George C. Scott (tie for Pattona and Dr. Strangelove)

Bonus: Peter Sellers as all his roles in Dr. Strangelove.

Klaus Kinski in Aguire is an obvious favorite of mine. Funny, he never dubbed his own voice. It was kept a secret until a recent interview that Kinski's voice was not in the film. I heard he wanted a million dollars for his dub. 5 times the movie's budget. Gotta love actors :)

Bronson in Once Upon a Time in America is amazing.
Wallach as Tuco is equally great.

Warren Oates in Bring Me The Head of Alfredo Garcia is a beautiful performance.

That's all I can think of for now..
