Kansas City Confidential and Bring Me The Head Of Alfredo Garcia... two of my favorites of the genre... beyond the obvious ones of course

"Asphalt Jungle" is awesome, directed by John Huston and starring Sterling Hayden.   I think this is the original "caper/heist" movie, spawned a genre.   I love the character Alonzo D. Emmerich, perfect name for a lawyer gone bad.   Plus he gets to slip the salami to a slutty Marilyn Monroe as his mistress  :P  Under-rated movie, not on cable very often.

"Thief" is another great heist film.  Michael Mann's directorial debut, real good performance by James Caan and Robert Prosky is magnificent as the reptilian Mob boss.

Alright, I am excluding the Gangster sub-genre and the Private Eye/Detective sub-genre

Asphalt Jungle
The Killing
The Big Combo
The Big Heat
Criss Cross
Kansas City Confidential
Crashout
Riffifi
Crime Wave
Point Blank
Cry of the City
The Desperate Hours
Reservoir Dogs
Pulp Fiction
Jackie Brown
Double Indemnity
A Touch of Evil ( this is sort of against my rule but...)
The Glass Key
Gun Crazy
Bonnie and Clyde
Johnny O'Clock
Lock, Stock and Two Smoking Barrels
Snatch
The Killers
Kiss of Death
The Lineup
Night and the City (1950)
Odds Agains Tomorrow
The Postman Always Rings Twice (1946)
Pick-up on South Street
The Set-Up
The Strip
Suddenly
Thief
Heat
This Gun for Hire
Hitman
Superfly

That's off the top of my head.  I've left out Gangster films like the Godfathers, Once Upon A Time..., the Long Good Friday, etc.   Detective/Private Eye/Police/Feds flicks, I've allowed Heists like The Killing, but not Capers like Ocean's 11 etc.

More feeling.

I left out the early John Woo films above such as Hardboiled, Once a Thief, and a Better Tomorrow.

Here are two Kung Fu crime flicks: The Boxer From Shantung and The Chinatown Kid.

More feeling.

Rififi
Once Upon a Time in America

One crime film I'd really like to see is The Violent Four (Banditi in Milano I think is the original Italian title). Stars Gian Maria Volonte and Tomas Milian.

It's class.

Michael Mann is The Man when it comes to crime films. Thief, Heat, Collateral, and Manhunter are all amazing. I wonder how the updated version of Miami Vice will turn out. Should be great. Michael Mann knows what he's doing.

Can't believe I forgot to mention...

Get Carter (1971, Mike Hodges)

... Brilliantly directed and acted. Apparently it bombed in the US - it was shown on a double bill with a Frank Sinatra film! - but it's generally considered the best British gangster film.

I'm going up to Newcastle this weekend, hopefully checking out a few of the filming locations.
